What is a high side dodge?

ANSWER
A high side dodge is a dodge that takes you into a position where you have a high angle shot. Typically out in front of the goal as opposed to a low side dodge which would take you to the side of goal where the angle is low.

When you attack the defender with your dodge if the dodge takes you in front of the goal it is on the high side or up top. If the dodge takes you to the side of the goal where you can see less goal that is a dodge to the low side for a low angle shot.

This is how I interpret your question if anyone else has a comment or something to add please add your comments.
